He realised early on that modern diner wanted more than just a tasty meal - they wanted to indulge their senses and push them to the limit.

Having visited many culinary legends such as El Bulli, Fat Duck and Joel Robuchon's restaurants on a regular basis, he decided to take Chinese food in a defferent direction and started experimenting with ideas he'd absorbed from his travels to enhance his culinary approaches and techniques.
