Details, Red Star Tavern
The exhibition kitchen is the focal point of this spacious yet inviting 200-seat room. Executive Chef Tom Dunklin orchestrates his menu, using a wood-fired brick oven, rotisserie, a smoker and a sizzling grill, and takes full advantage of a wealth of local and regional ingredients from local farmers and sustainable agriculture. The result is such mouthwatering dishes as the infamous Roast House Iron Skillet Cornbread with Wildflower Honey Butter, Rotisserie Dry Aged American Buffalo Prime Rib with 'Dirty' Rice Spaeztle and Juniper Jus and Willamette Valley Vineyards Pinot Noir Jus and Bananas and Bourbon or Coffee and Doughnuts.
